Sustainability used to sit in the marketing brief. It now sits in the supplier questionnaire, and that is a different document with different consequences. A category buyer at a European retailer is increasingly required to report on the environmental profile of the goods they buy, which means they need answers from suppliers, in writing, in a form an auditor will accept. "We care about the environment" is not an answer. Neither, usually, is a certificate.
This guide is written for the person who has to fill in that questionnaire. It covers the four places in a snack supply chain where environmental impact actually concentrates, what evidence exists for each, and — the part most guides skip — how to tell the difference between a claim you can verify and a claim you are simply being asked to believe.
Why this became a procurement problem
Three pressures converged, and none of them originate in consumer preference.
The first is corporate reporting. Large companies in scope of EU sustainability reporting obligations have to account for emissions in their value chain, not only their own operations. For a food business, the overwhelming majority of that footprint sits in purchased goods. A buyer cannot report it without supplier data, so the request travels down the chain to people who have never been asked for a kilowatt-hour figure before.
The second is due diligence law. The Corporate Sustainability Due Diligence Directive (EU) 2024/1760 establishes obligations for in-scope companies to identify and address adverse human rights and environmental impacts connected to their operations and business relationships. The third is packaging law and extended producer responsibility. Packaging that is difficult to recycle is becoming more expensive to place on the market, and that cost lands on whoever puts the product on the shelf. It is now a line item, not an ethic.
The consequence for sourcing is straightforward: environmental questions have moved from "nice to have" to a gate that a supplier either passes or fails, and buyers need to know which questions are worth asking.
The four places impact concentrates
For a dried or packed snack, the environmental profile is dominated by four things. Agriculture is a fifth and often the largest, but it is also the one a buyer influences least directly, so it is treated separately below.
1. Energy in processing — usually the drying step
Removing water is energy-intensive. In a dried snack, the drying stage is typically the single largest processing energy consumer, and the energy source behind it is the biggest lever available in the factory. The same product dried by a gas-fired burner, by a biomass boiler, by grid electricity or by geothermal heat has meaningfully different emissions attached to an identical specification sheet.
What to ask for:
- The energy source for the drying stage specifically, not the site average. A factory can run on renewable electricity for lighting and gas for the dryers.
- Whether the source is on-site or purchased, and if purchased, whether it is backed by contractual instruments or simply the national grid mix.
- Whether the process energy is metered separately from the rest of the site.
- Energy per unit of output, or per unit of water removed, if the supplier tracks it.

2. Transport — mode matters more than distance
Distance is the intuitive metric and the misleading one. What dominates freight emissions is the mode. Sea freight moves a tonne of goods a long way for a small fraction of the emissions of air freight; road sits between them, and rail below road.
Two practical implications follow for snack sourcing. First, a nearer supplier reached by truck across a continent is not automatically better than a further supplier reached by sea. Second, dried products carry an advantage that is easy to overlook: water has already been removed, so a container carries far more edible product and far less weight that will be discarded. The comparison to make is emissions per kilogram of finished product delivered, not per kilogram shipped.
Also worth checking: load efficiency, whether shipments are consolidated or sent piecemeal, and whether there is EU-side warehousing that shortens the final leg and removes the need for repeated long-distance small orders. 3. Packaging — the genuine trade-off
Snack packaging is where good intentions collide with physics. The barrier properties that keep a dried product crisp and an oil-containing product unoxidised are most easily achieved with multi-layer laminates, and multi-layer laminates are the hardest structures to recycle. Mono-material films have improved substantially, but the buyer needs to confirm two separate things: that the structure is mono-material in fact, and that it is collected and recycled in the destination markets, which is a local infrastructure question rather than a material-science one.
Questions that produce evidence:
- The full material composition of the pack, layer by layer, with grammages — from a technical data sheet, not a sales statement.
- Whether any metallised layer or aluminium foil is present, and what it is doing for shelf life.
- Whether the structure has been assessed for recyclability in the specific destination market.
- The weight of packaging per unit of product, which is the metric that improves quietly and is rarely quoted.
- Who holds the EPR registration in each market and how fees are allocated.
Reducing the barrier to improve recyclability shortens shelf life, which increases waste. That is a real trade-off with no free answer, and any supplier who presents it as costless has not run the stability study. 4. Raw material and land
The agricultural stage usually carries the largest share of a food product's footprint, and it is the stage furthest from the buyer's control. What a buyer can realistically do is narrow the distance: know the growing region rather than only the country, know whether supply is contracted from an identified grower base or bought on the open market, and know what the supplier requires of those growers on water, inputs and residues. Traceability is the precondition for every other environmental claim about the crop — you cannot make a defensible statement about land use for material whose origin you cannot name. Deforestation-linked commodities carry their own legal regime; most fruit and vegetable snack crops fall outside it, but ingredients such as palm-derived fats and cocoa inside a formulated snack do not.
Verifiable versus marketing
This is the table to keep. The left column is what suppliers say; the middle is what genuinely substantiates it; the right is the failure mode.

Two rules make the table usable. First, always read the scope of any certificate rather than its name — certificates cover named products at named sites, and a valid certificate can be entirely irrelevant to the product you are buying. Second, ask for the boundary of any number. A footprint figure without a boundary is not a figure.
The evidence pack a serious buyer requests
Rather than a questionnaire of adjectives, ask for documents. A supplier able to produce most of this list is operating a real system.

Building it into the sourcing process
Sustainability requirements work when they enter at the same time as the technical specification, and fail when they are added after a supplier is selected.
Put the environmental questions in the RFQ, not the contract. A supplier who cannot meet them should be eliminated before sampling, not discovered afterwards. Weight the questions honestly — if energy source matters more to your reporting than packaging weight, say so, and score accordingly. Ask for the documents rather than the answers, because documents are checkable and answers are not.
Then verify a subset. Not everything, and not annually for everything, but choose two items per supplier per year and actually confirm them: call the certificate issuer, check the register, ask for the meter reading behind the statement. Verification that never happens teaches suppliers that the questionnaire is decorative.
Finally, accept that some of this is genuinely uncertain. Emission factors carry ranges, recyclability depends on local infrastructure that changes, and every footprint is a model.
