From geothermal drying to powder: the process in three stages
Arovela's fruit is dried at the Sındırgı facility in Balıkesir using geothermal heat — a low-temperature, controlled-humidity process explained in our geothermal drying B2B guide. Powder is a downstream stream of that same dried fruit, not a separate raw material.
1. Drying. Fruit is dried to a moisture level lower than that of snack fruit, because a fruit that will be milled must be brittle enough to fracture rather than smear. Drying endpoint is a controlled parameter and is confirmed by moisture and water-activity measurement before the lot is released to milling.
2. Milling. Dried fruit is size-reduced in stages. High-sugar fruits (fig, date, apricot) are the difficult ones — friction heat softens the sugar and the material can ball up — so milling is managed for temperature and throughput rather than driven for speed. The result is a raw powder with a broad particle-size distribution.
3. Sieving and classification. The raw powder is passed through screens to produce the fraction the spec calls for. Buyers usually specify a mesh range rather than a single mesh: coarser fractions (in the region of 40–80 mesh) for bakery and visible-particle applications, finer fractions (in the region of 80–200 mesh) for beverages and supplements where smoothness matters. Purée is not "powder plus water". It is a separate process line: fruit is rehydrated or processed fresh, sieved to remove skins and stones to a defined finish, and heat-treated to the stability the buyer needs. The key spec items are Brix (soluble solids), pH, finish (mesh of the finishing screen), and the thermal treatment and packaging that determine whether the purée is chilled, frozen or ambient-stable. Purée moves in pails, drums or aseptic bags rather than sacks, ships heavier per kilogram of fruit solids, and has different shelf-life logic — oxidation and colour drift matter, but the dominant control is the thermal-packaging combination. Three behaviours drive most complaints about fruit powder, and all three are predictable.
Solubility versus dispersibility. Whole-fruit powder does not fully dissolve — the fibre fraction disperses. In a smoothie or a shaken beverage that is fine and expected; in a clear drink it is not. State whether you need dispersion (fibre suspended) or true solubility, because the answer changes the product recommendation.
Hygroscopicity. High-sugar fruit powders pull moisture from the air. Left open in a humid packing hall, they cake within hours. The practical consequences: moisture-barrier packaging is not optional; opened bags should be resealed and used quickly; and any co-blending with other hygroscopic ingredients (some fibres, some sweeteners) accelerates the effect.
Caking and flow. Even in sealed packaging, fine high-sugar powder can compact under its own weight during transit. Options include a coarser cut, a natural flow aid declared on the label, or bag-in-box packaging that limits compression. Low starting moisture and water activity buy time; a barrier film with a good moisture-vapour rating keeps it; nitrogen flushing or oxygen absorbers help colour and flavour retention in the fine fractions where surface area is high; opaque packaging protects colour. A medium-mesh apricot powder in bulk sacks from fruit we hold in stock is a different proposition from a fine-mesh powder of a seasonal fruit filled into retail pouches.
